
Create unique, restaurant-quality cocktails at home with this Oregano Simple Syrup! This recipe is super easy, but pays off in delicious, herby flavor. It’s the perfect syrup to use in seasonal spring cocktails or sangrias!
To me, spring = herbs. I don’t know why, but as I age my brain becomes more and more hyper-seasonal. For example, you wouldn’t catch me lighting up my pumpkin candles until September 1st. Because, of course, these are the seasons:
Spring – March, April, May
Summer – June, July, August,
Autumn – September, October, November
Winter – December, January, February.
No, I don’t care about solstices and equinoxes! These are the rules! But I fear I’m treading a bit far from the point of this post. Making simple syrups is my fave. You can incorporate real, fresh flavors into your cocktails just by infusing ingredients into syrup. For example – are summer tomatoes in season? Make an heirloom tomato-infused margarita. How about rhubarb? Make a rhubarb simple syrup for a Lillet spritz!
Now, I know that oregano isn’t exactly an herb that people associate with cocktails. But oregano’s slightly savory, piquant flavor adds SO much interest to cocktails or sangrias. Here’s some ideas of what you can do with this simple syrup:
- Make a garden sangria
- Add it to a margarita with mezcal and orange peel
- Use it along with mint in a mojito
- Combine with some gin and top with a fruity seltzer for a spin on a gin fizz
- Make a Lillet spritz with this recipe instead of regular simple syrup

Oregano Simple Syrup
Ingredients
- 1/2 Cup Water
- 1/2 Cup Sugar
- 1/2 Cup Fresh Oregano loosely packed
Instructions
- Wash and dry the oregano before using.
- Add the water, sugar, and oregano to a saucepan and bring to a boil, stirring frequently.
- Once the mixture is bubbling, reduce heat, and simmer for about 8-10 minutes, stirring often.
- When done, remove from heat and let the syrup come down to room temperature.
- Strain the syrup through a fine mesh sieve, and discard or compost the oregano.
- Enjoy!
Notes
- Save this syrup in the fridge for 3-4 days, or in the freezer for 2-3 months.

What is the formula of simple syrup?
Simple syrup is usually made with equal parts sugar and water, boiled together until the sugar dissolves. For flavored simple syrup, you infuse fruits, vegetables, or herbs during this process.
What is the ratio of sugar to water for soda syrup?
For most simple syrups, the ratio of sugar to water is 1:1. However, you can make thicker syrups by creating a ratio of 2:1 sugar to water.
What is simple syrup used for?
Simple syrups aren’t just for cocktails! They can be used on pancakes, on top of ice cream, or even swirled into iced coffee! However, I wouldn’t recommend using this oregano simple syrup on sweet pancakes – it might taste a little odd ;)
Should simple syrup be made by weight or volume?
Here in America, we usually measure ingredients by volume. For this simple syrup recipe, the measurements are given in volume – 1/2 cups, to be precise. However, this can get trickier because sugar and water have different volumes per weight. For example, 1 cup of sugar is about 198 grams, while 1 cup of water is 227 grams. So for this recipe, stick to measuring by volume :)
