This is a fresh and colorful Radicchio Chopped Salad with butter beans and Italian herbs! It’s tossed with a zesty dressing for bright flavor in every bite. This salad is also vegetarian and perfect for meal prep!


Every spring when I see the heirloom radicchio in the grocery store, I’m like a kid in a candy store. I don’t know why but I get SO EXCITED about colorful, unique produce! The Variegato di Castelfranco (bright green with red flecks) and Rosa Radicchio (pink) varieties in particular are just so gorgeous. Of course, they can be a little hard to find in some areas, so regular radicchio will work just fine. And of course, if you don’t like radicchio, you can always sub in arugula, kale, or mixed greens. Just note that those softer greens aren’t as hardy as radicchio, so the salad won’t last in the fridge as long.

Also – this chopped salad contains havarti cheese for pops of creaminess and texture, but you can omit that if you want to make this vegan! Radicchio Chopped Salad

This is a fresh and colorful Radicchio Chopped Salad with butter beans and Italian herbs! Vegetarian and perfect for meal prep.

Ingredients

The Italian Dressing

  • 1/8 Cup Extra Virgin Olive Oil
  • 2 Tbsp Red Wine Vinegar
  • 1/2 Tsp Dried Basil
  • 1 Tsp Dried Oregano
  • 1 Tsp Dijon Mustard
  • 1/2 Tbsp Honey
  • 1/4 Tsp Salt or more to taste
  • Black Pepper to taste

The Radicchio Chopped Salad

  • 2 Cups Chopped Radicchio Rosa packed, see notes
  • 2 Cups Chopped Variegato di Castelfranco Radicchio packed, see notes
  • 1 Cup Chopped Fresh Parsley packed
  • 1 15 oz Can Butter Beans rinsed and drained
  • 1 Cup Pepperoncini chopped
  • 1 Cup Jarred Artichoke Hearts chopped
  • 3/4 Cup Havarti Cheese cubed
  • 3 Scallions chopped

Instructions

  • To begin, make the dressing. Combine all of the dressing ingredients in a bowl and whisk together until combined. Taste, and adjust seasoning to your preference. Set aside.
  • Prep all of your salad ingredients as directed.
  • Combine all salad ingredients into a large bowl. Whisk together the dressing once more, then pour over the salad and mix.
  • Serve and enjoy!

Notes

  • If making this salad ahead of time, prep all of the ingredients and store them separately. Combine everything just before serving.
  • If you can’t find the heirloom varieties of radicchio in the grocery store, regular radicchio will just just fine!
  • If you don’t like radicchio, sub in any greens you like.
  • This salad is lightly dressed. Feel free to double the dressing recipe to have extra left over, if desired.

For best quality, this salad will last about a day or two in the fridge.

Can I make Radicchio Chopped Salad ahead of time?

Yes, but store all of the prepped ingredients separately. Combine the salad just before serving for best texture and quality. The dressing will last 3-4 days in the fridge, so that can be prepped well ahead of time.

What if I don’t like radicchio? What can I use instead of radicchio in a salad?

Radicchio has a bitter, peppery taste that may not be to everyone’s liking. That’s why there’s half a tablespoon of honey in the dressing – it counteracts the radicchio’s bitterness. However, if you don’t like radicchio, try kale, frisรฉe, arugula, or mixed greens instead! Just note that soft greens won’t hold up as long once the salad is mixed.

What are common mistakes when making chopped salad?

The two most common mistakes that can happen are:

  • Dressing the salad too soon – be sure to dress the salad just before serving to prevent sogginess
  • Using greens that are still wet – make sure when you wash your radicchio, you’re drying it completely to prevent excess water in the salad
Is radicchio a cabbage or lettuce?

Radicchio is neither a cabbage nor a lettuce! Itโ€™s a type of chicory, belonging to the Asteraceae botanical family. Asteraceae also includes endive, frisรฉe, and escarole. Plants in the chicory family often have a bitter flavor. In fact, there is a type of coffee-esque drink made from the chicory root, simply called chicory. I love this blend by Cafรฉ du Monde out of New Orleans that contains coffee and chicory (affiliate link!). Since chicory doesnโ€™t contain caffeine, itโ€™s a great way to get the bitter, rich taste of coffee without as much caffeine.
