My husband Jon and I are blessed with seven beautiful nieces and nephews on his side of the family – Rachel, Naomi, Judah, Levi, Alessia, Miriam, and Selah. Sadly, Levi, Alessia, and Selah live out of state so I don’t get to see them nearly as often as I want to. But my three nieces Rachel, Naomi, and Miriam, and my nephew Judah, live here in Connecticut! I love getting to visit my sister-in-law Kathryn and the kids.

The other day, I stopped by to see everyone. Whenever I visit, I always bring the kids goodies from Trader Joe’s – cheese, pepperoni, cookies, and juice boxes. We all sat down at the table to have a little lunch together, and Kathryn laid out some healthy options as well (namely, vegetables!). I asked the kids, “Have you ever heard of Bugs Bunny?” and they hadn’t. So I picked up a carrot, bit into it with a loud crunch, and said Bugs Bunny’s catchphrase – “What’s up, Doc?” And they LOVED it. Rachel, the eldest, immediately picked up a carrot and emulated me. I know how kids can really pick up on things that adults say, so I’m interested to hear from Kathryn if they kept repeating “What’s up, Doc?” after I left! 😂


About the Recipe

Carrots aren’t just delicious for rabbits, of course. I love finding seasonal winter carrots in the grocery store because they’re perfect for roasting. Roasting carrots really brings out their sweetness, especially when cooked with a little bit of honey!

Making these Roasted Multicolored Carrots is incredibly simple. All you have to do is wash and peel the carrots, toss them with olive oil, salt, black pepper, and honey, then bake them. You can add herbs for garnish like I did, but that’s not necessary. The result is a slightly firm yet soft carrot that’s bursting with sweet, earthy flavor. I know you’ll love them!

Roasted Multicolored Carrots

Ingredients

  • 1 Lb Whole Multicolored (Rainbow) Carrots
  • 1 1/2 Tbsp Extra Virgin Olive Oil
  • 1 Tsp Honey
  • 1/2 Tsp Salt
  • Black Pepper to taste
  • Fresh Parsley, for garnish optional

Instructions

  • Preheat your oven to 425 degrees F.
  • Remove any stems from the carrots, then wash them. Once they're clean, dry them and peel off the outer layer of rough skin using a vegetable peeler.
  • Place the carrots on a baking sheet lined with parchment paper. Drizzle the carrots with the olive oil and honey, then sprinkle on the salt and pepper. Toss the carrots so that everything is evenly coated.
  • Bake the carrots for 20-30 minutes, or until fork-tender but not mushy. Check often at the end of the cooking time to gauge doneness.
  • Garnished with fresh chopped parsley, if you'd like.
  • Enjoy!

Notes

  • If making this recipe with baby rainbow carrots instead of whole ones, roast for 15-20 minutes instead.
  • These carrots will keep in the refrigerator for 3-4 days.
  • Feel free to add other seasonings you like to jazz up the carrots – thyme, garlic, or a tiny pinch of cinnamon would be delicious!
