Potatoes are such a great vegetable – they’re delicious in so many different ways! My family (especially my dad’s side) has always been huge potato lovers. Maybe it’s our English and Scottish ancestry, but we all go nuts for potatoes – chips, fries, hash browns, you name it. But for everyday eating, I love making roasted potatoes. This recipe is a great example of what I regularly cook in my house, aside from the recipes I test for the blog. It’s an easy formula – cut of the potatoes, toss them with olive oil, salt, herbs and spices, then bake them in the oven. So simple!
When it comes to roasted potatoes, I love mixing and matching spice combinations. In this recipe I use Greek herbs like oregano and parsley, but I rotate seasonings to match whatever I’m serving the potatoes with. Lemony Greek Roasted Potatoes
Ingredients
- 2.5 Lbs Yellow or White Potatoes
- 1 1/2 Tsp Dried Oregano
- 1 Tsp Garlic Powder
- 1 Tsp Dried Parsley
- Black Pepper to taste
- 1 Tsp Salt
- 3-4 Tbsp Extra Virgin Olive Oil
- Juice from 1 Lemon
- 1/3 Cup Chopped Walnuts for serving
- 1/3 Cup Fresh Parsley for serving
- Extra Squeeze of Lemon Juice for serving
Instructions
- Preheat your oven to 425 degrees F.
- Prep your potatoes by washing and drying them. Peel or cut off any black or green spots on the skin. Then, cut the potatoes into rough wedges (see photos for reference).
- In a bowl, toss potatoes with the olive oil, salt, spices, and the juice from 1 lemon. Stir well.
- Place the potatoes on a baking sheet lined with parchment paper. Spread out the potatoes as much as possible.
- Bake for 25 minutes, then remove from the oven and stir. Spread the potatoes out again before putting back in the oven.
- Bake for another 20-25 minutes, or until potatoes are fork-tender but not mushy. Depending on how large you cut your potatoes, check more frequently near the end of the cooking time to prevent overcooking.
- Serve potatoes topped with chopped walnuts, fresh parsley, and more lemon juice (if you'd like). Enjoy!
