It’s officially March Madness, everyone!!
Just a quick post today – our home team, the UConn Huskies, are playing against the Colorado Buffaloes. I’m usually not into conventional sports (things like figure skating and rock climbing are more my jam), but when it comes to the Huskies, I’m a loyal fan. UConn won the National Championship my freshman and senior year, and it was a blast being a student on campus during those fantastic years. Actually, it was pretty insane. I remember freshman year I was walking to North Campus with some of my friends, and we saw these kids lighting fireworks in the middle of the road. Just casually. We quickly ran out of the way before we could get singed by the fireworks. And then senior year was just as crazy… when we won, we all rushed to the middle of the campus and gathered, yelling and screaming and cheering for the Huskies. I personally climbed into a tree to get a better view. It was fantastic.
And although it’s not quite as exciting to be a fan off-campus, we still feel the Husky pride even now. Most of my friends in the area are friends from college, so we still all get together to watch the games. Go Huskies!
I don’t think I’ve ever posted a juice recipe on here before, but it’s about time. I have a great little Breville juicer and I love making fresh juice whenever I can. I know a juicer is kind of a single-use appliance, but I highly recommend getting one if you’re into health and wellness. Juicing is such a great way to stay hydrated while getting lots of vitamins and nutrients, and you can even make recipes with the pulp – like these juiceĀ pulp crackers or these almond pulp macaroons.
This sunny citrus beet juice packs a nutritional punch of vitamins, minerals, and antioxidants. It tastes amazing – it’s a succulent combination of tart citrus and sweet and earthy beets – plus, it’s a beautiful sunny orange and pink color that will make you smile. Just look at that juice swirl! :)

Sunny Citrus Beet Juice
Ingredients
- 2 Golden Beets peeled
- 2 Grapefruits peeled
- 4 Cara Cara Oranges peeled
- 6 Blood Oranges peeled
- 2 Cups Baby Carrots
Instructions
- Prep your fruits - peel beets and citruses.
- Juice everything.
- Serve chilled. Enjoy!
