Hey-o! This is the first time I’ve posted a Monday recipe in a while, but I wanted to be sure I squeezed in a St. Patrick’s Day themed recipe before my post on Wednesday. These Lucky Lime truffles aren’t quite the same thing as a pot of gold, but they’re super easy and fast to make, and the perfect sweet treat that’s also secretly good for you!

I also want to announce something…. going forward, I’m going to start doing more sweets recipes for Well and Full. The reason I haven’t really been doing them up until now is because I’m absolutely TERRIBLE at baking. I have whatever the equivalent is of a black thumb of gardening when it comes to baking. But I’ve been studying up on baking ratios, and trying out goodies from my friends Faring Well and Feasting on Fruit (and seeing if I can figure out how they make the best darn sweets around). The cookie recipe I’m currently working on is one that I scribbled up after spending a frantic 30 minutes trying to decipher these grams to tablespoons to cups ratios that I read about online. I found this website that said for a cookie recipe you need, in weight, 3 parts flour, 2 parts fat, and 1 part sugar. Suffice to say I am really stretching my cooking abilities trying to figure out how these ratios apply to actual baked goods (and all vegan, no less).

But I’m not complaining! I don’t personally like sweets all that much (I make an exception for chocolate chip cookies), but my guy has a secret, mega sweet tooth, and I love being able to make treats that he likes! Some recipes I’m working on include banana bread cupcakes, cinnamon cupcakes, almond butter cookies, and chocolate chip cookies.

But I need your help!! If you have any sweet recipe requests, please leave them in the comments!

Like I said, I’m not the biggest fan of desserts, so I need all the help I can get figuring out what to make! And that’s not to say that I don’t LIKE desserts. I do! I would just much rather prefer a bag of chips or a bowl of popcorn ;) So if you have any sort of sweets that you’d like, please let me know!

Lucky Lime Oat Truffles

These lucky lime oat truffles are perfect for St. Patrick's Day - they're quick to make, delicious, and full of lucky lime flavor! Like key lime pie, but in truffle form.

Ingredients
  

  • 1 1/2 Cups Rolled Oats
  • 1 Cup Pitted Dates
  • 1 Tsp Lime Zest
  • 2 Tbs Maple Syrup
  • 1-2 Tbs Water

Instructions
 

  • In a food processor, combine all ingredients and process until a sticky dough is formed. Add in 1 tbs of water first. If the dough still isn't sticking together, add the 2nd tbs of water.
  • Remove dough from processor and shape into 1 - 1 1/2 inch sized truffles. You'll end up with 7-8 truffles.
  • Enjoy!

Notes

These truffles will keep in the fridge for about 3-4 days.

    As soon as I saw lime I was excited! I love anything lime flavoured. Can’t believe these have so little ingredients too! They look delicious :)

    Love this delicious simplicity! Honestly, these are some of my favorite kinds of dessert recipes to find. Minimal, healthy(ish) ingredients, and lots of hearty flavor. Can’t wait to see what else you whip up! xx
