When Bob’s Red Mill, one of my most trusted food brands that I use in my own kitchen, approached me to create an Easter baking recipe, I had to stop and think for a minute. Baking isn’t really my thing – I’m horrible at creating desserts because they have to be so exact. I’m more of a “add a pinch of this, add a pinch of that” kind of gal. When I asked them if they’d be okay if I did something savory, I was thrilled when they said yes! So here’s my Easter baking recipe – Vegan Buffalo Chickpea Fritters!

As many of you know, I’m obsessed with all things spicy. At the top of my list of spicy foods is buffalo sauce. I have a buffalo hummus recipe, buffalo chickpea wraps, and some bomb buffalo cauliflower tacos. And this recipe actually started out to be a vegan buffalo chickpea salad sandwich! But one day I decided to add flour to the batter, bake it, and the rest is history.

For this recipe I used Bob’s Red Mill all-purpose flour, but you can also use their whole wheat flour too (which will give the fritters a subtle nutty flavor). I love using the Bob’s flour because they’re an employee-owned company that maintains a close relationship with their farmers, creating the highest quality products. This flour has been super dependable and always fresh!

Vegan Buffalo Chickpea Fritters

These Vegan Buffalo Chickpea Fritters are the perfect easy, kid-friendly meal! These are great for dipping in barbecue sauce or ketchup.

Ingredients
  

  • 1 15 oz Can Chickpeas
  • 1/4 Cup Chopped Red Onion
  • 1/4 Cup Chopped Green Bell Pepper
  • 3 Tbs Vegan Mayo
  • 2 Tbs Buffalo Sauce
  • 1/2 Tsp Salt
  • Black Pepper to taste
  • 1/2 Cup All-Purpose Flour

Instructions
 

  • Preheat your oven to 400 degrees.
  • Rinse, drain, and dry your can of chickpeas (they don't have to be completely dry, but get most of the brine off). In a bowl, mash chickpeas a little, but leave some chunks of chickpeas in the mash.
  • Add in the chopped red onion, chopped bell pepper, mayo, buffalo sauce, salt, and pepper. Mix well.
  • Then, add in the flour. Mix with a spoon until you can't anymore, then knead the dough with your hands for a few times.
  • Line a baking sheet with parchment paper. Using a cookie or ice cream scoop, scoop out balls of the fritter dough. Use your hands to flatten them into approximately 2-inch disks.
  • Bake fritters in the oven for 30-35 minutes.
  • Serve with your favorite dip or salad, and enjoy!

    Yum, I adore chickpea everything! I’ve found that my husband doesn’t love the consistency of chickpeas, but if I switch up the texture to make them in hummus or fritters like these, he’s fine with them. I’m sneaky like that! ;-)
